I also use villager wheat farms but farm carrots and potatoes with a fortune III tool although using villager farms for all 3 probably makes more sense time wise. In the end, they make more than I can realistically trade with villagers. I went with clock based piston farms (hopper or daylight sensor) rather than observer as a trade off between yield efficiency and space/resource efficiency for sugar cane, melon and pumpkin. I focused on auto farms mostly to trade with villagers. Do need to add some simple Redstone to basically turn it on and off and reset it as sometimes the clocks turn off if the generator is unloaded/reloaded. I do run into the 500 cap at times especially when other clocks or farms kick in but I only lose 1 generator for a bit so it’s worth it for me. It can be tweaked a little to minimize Redstone signals and I used all 3 levels (15 generators). I’m a fan of thirtyvirus’s stone generator. Great summary! NOTE: I haven't built a fully automatic pumpkin farm on this server yet so i don't know what is the best design and if this design works properly. I chose this design because i was looking for an Observer-based farm.
